ROBUST FRIED PORK CHOPS 
4 to 5 center cut pork chops
1 onion, chopped
1/2 garlic clove, chopped
olive oil
all-purpose flour
non-stick cooking spray (Pam)
salt and pepper, to taste

In a large skillet, on medium high, spray the non-stick spray to coat the bottom of skillet. Pour in enough olive oil to cover the bottom of skillet. Season pork chops with salt and pepper to your liking and lightly coat with flour. Arrange chops into skillet.

Cook for 3 minutes on each side then turn skillet down to medium. Continue cooking chops turning every 4-5 minutes for the next 10 minutes.

Add in chopped up onions and garlic. Partly cover with a lid allowing the steam to escape. Let it cook for 2 minutes, then turn over chops for 2 more minutes.

After 2 minutes, take chops out of skillet and arrange on plate. Scoop out the onions and garlic and spread on top of the chops. Serve with a vegetable and rice and a dinner roll.

Makes 4 to 5 servings.
