HAM AND POTATOES AU GRATIN 
2 c. potatoes, sliced and peeled
1 c. ham, cooked and diced
1 tbsp. minced onion
1/3 c. butter
3 tbsp. all-purpose flour
1 1/2 c. milk
1 c. (4 oz.) cheddar cheese, shredded
3/4 tsp. salt
Dash pepper
Fresh parsley, chopped

Combine potatoes, ham and onion in a greased 1-quart casserole; set aside. In a saucepan melt butter over medium heat; stir in flour until smooth. Gradually add milk, stirring constantly until mixture thickens and bubbles. Add cheese, salt and pepper; stir until the cheese melts. Pour over potato mixture and stir gently to mix. Bake at 350 degrees for 1 to 1 1/2 hours. (Check potatoes.) Doubled this is great for fellowship meals.
