ZUCCHINI SOUFFLE 
2 c. mashed cooked squash
3 well beaten eggs
1 c. grated Cheddar cheese
1 c. crushed crackers

Season with salt, pepper, garlic and Worcestershire sauce. Beat eggs. Add squash, cheese, crackers and seasoning. Top with cheese and sprinkle with paprika. Bake at 325 degrees for 35-49 minutes.
