BROCCOLI SALAD | |
Use either one large bunch of broccoli or half a bunch of broccoli and half a head of cauliflower (or a very small head of cauliflower). Chop the broccoli (and cauliflower if using it) including the leaves and stem. Mix with it one small, sweet onion, chopped; 1 jar Schilling imitation bacon chips; and 1 cup of raisins (or more if you wish). Mix with dressing and chill for several hours for flavors to blend (overnight is best). DRESSING: 1 c. mayonnaise (I use lite mayonnaise) 2 tbsp. lemon juice 2 tbsp. sugar (I use 4 packets of Equal instead of sugar) Mix well. Use only as much of this as needed to moisten the salad. The size of the bunch of broccoli and or heat of cauliflower will determine if you need all of the dressing or not. If some is left, it will keep in the refrigerator for a long time. The amount of onion and raisins are both adjustable to taste. In fact, I have even left out the onion completely, but it is better with at least a little. |
