SPOON BREAD 
Corn Bread:

Corn bread just naturally goes with fried chicken, ham steaks and - wel, just about everything else. Don't beat the batter; just mix it, and only until dry ingredients are moistened. Corn-meal products are somewhat coarse in texture and crumbly - and best when served piping-hot with butter and jam!

3 cup milk
1 cup yellow or white corn meal
2 tbsps. shortening, melted
2 eggs
1 tsp. baking powder
1 tsp. salt

Combine corn meal and milk. Cook until consistency of mush, about 20 minutes. Pour into a greased casserole and bake.

Time, Temp and Yield:

30 min.; 375°F; 6 to 8 servings
