AMISH COOKIES 
1 c. sugar
1 c. confectioners' sugar
1 c. (2 sticks) butter
1 c. vegetable oil
2 eggs
1/2 tsp. vanilla
4 1/2 c. all-purpose flour
3/4 tsp. cream of tartar
3/4 tsp. baking soda
1/2 tsp. salt

Mix and beat sugars, butter, oil and eggs until fluffy. Add vanilla, flour, cream of tartar, baking soda and salt. Mix well. Roll into balls - not too big. Flatten with a fork or a glass dipped in sugar and bake at 350°F for about 10 minutes.

Makes about 100 cookies.
