MINI MEAT LOAVES WITH VEGETABLES 
1 1/2 lbs. ground beef
1 egg
1 (8 oz.) can tomato sauce
1/2 tsp. Italian seasoning
1 (3 oz.) can French fried onions
6 sm. potatoes, thinly sliced
1 (16 oz.) pkg. frozen mixed broccoli, corn and red pepper, thawed, drained

Combine ground beef, egg and half the tomato sauce in bowl; mix well. Add Italian seasoning and half the French fried onions; mix well. Shape into 4 loaves. Place in 9x13 inch baking dish. Arrange potatoes around loaves. Bake, covered, at 375 for 35 minutes. Spoon remaining tomato sauce over loaves. Bake, uncovered, for 15 minutes. Sprinkle remaining onions over loaves. Bake for 5 minutes longer.
