CHOCOLATE CHIP CUPCAKES 
1/3 c. shortening or butter
1 c. brown sugar
1 egg
1/2 c. warm coffee
1 1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
3 oz. chocolate chips

Cream shortening with brown sugar. Add egg and coffee; mix well. Sift dry ingredients together and mix well with first mixture. Pour batter into cupcake pans and top with 3 ounces chocolate chips. Bake in 350 degree oven 20-25 minutes.
