MOM'S BANANA SNACK CAKE 
1 1/4 c. flour
2/3 c. sugar
1/4 c. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. mashed ripe banana
1/3 c. oil
1 egg, slightly beaten
1 tbsp. vinegar
1 tsp. vanilla

In 8 or 9 inch square pan, mix well with fork the flour, sugar, cornstarch, soda and salt. Add the remaining ingredients and mix well. Bake at 350 degrees for 30-35 minutes. Frost after well cooled with chocolate frosting or lemon frosting.

LEMON FROSTING:

1/3 c. butter
1 1/2 c. powdered sugar
1 tbsp. lemon juice

Mix well and frost cake.
