CHOCOLATE SNACK CAKE 
1 2/3 c. flour
1 c. brown sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. oil
1 tsp. vinegar
1/2 tsp. vanilla

Heat oven to 350 degrees. Mix flour, brown sugar, cocoa, baking soda and salt in bowl. Mix in remaining ingredients. Bake until wooden pick inserted in center comes out clean, 35-40 minutes. Bake in 8 x 8 x 2 inch square pan. Do not greased pan.

VARIATIONS:

Applesauce: Omit cocoa and vanilla. Mix 1 1/2 teaspoons allspice into flour mixture. Decrease water to 1/2 cup and stir in 1/2 cup applesauce.

Double Chocolate: Sprinkle 1/2 cup semi-sweet chocolate chips over batter in pan.

Oatmeal-Molasses: Omit cocoa and vanilla. Mix 3/4 cup quick-cooking oats, 1/2 cup raisins and 1 teaspoon allspice into flour mixture. Mix in 2 tablespoons molasses with the water.

Chocolate-Banana: Decrease water to 1/2 cup and stir in 1/2 cup mashed ripe banana.
