CHEESE RAVIOLI 
For the dough:

3 cups all-purpose flour
1/4 cup olive oil
1/2 cup water
1 tsp. salt
2 eggs

For the filling:

1 cup cottage cheese
3/4 cup mozzarella cheese
1 tbsp. basil
1 tsp. garlic salt
dash ground red pepper

With a fork, beat the eggs in a medium sized bowl. Add water, oil, and salt. Pour one cup of flour into the mixture and stir with fork until it is well blended. Do the same with the remaining two cups of flour.

Knead the dough until it is stiff, but not sticky. Then place on a lightly floured surface.

Roll the dough, until it is nearly transparent, then cut into two inch wide stripes. Set those aside and get a small bowl to mix the filling.

Place the cottage cheese and mozzarella in the bowl; mix them together with your hands. Add the seasonings.

Now, place a small amount of filling on one strip of dough, about an inch apart. Place another piece of dough over the top of that one. With wet fingers press down the edges, then cut into squares. Continue until there is no more filling.

Let your ravioli dry for at least an hour, turning over once. Cook in rapidly boiling water for about eight minutes.

Cover in marinara sauce and sprinkle with Parmesan cheese. Enjoy.
