HELEN MC HALE'S RASPBERRY MERINGUE COOKIES | |
BOTTOM LAYER: Mix 1/2 c. soft butter 1/2 c. confectioner's sugar Stir in 1 c. flour 2 egg yolks Press and flatten with hand to cover bottom of 9x13 pan. Bake 10 minutes at 350 degrees then take out and spread with raspberry jam. Top with meringue topping and return to oven and bake 25 minutes more. MERINGUE TOPPING: 2 egg whites 1/2 c. sugar Beat whites until stiff, gradually beat in sugar. |
