GUAVA FRUIT SPICE CAKE 
1 cup water
1 cup raisins
1 cup walnuts
1 cup unsweetened applesauce
1 (8 oz.) can diced guava fruit in passion fruit juice
2 eggs
2 tsp. vanilla extract
3/4 cup shortening (I use Crisco)
1 cup granulated sugar
2 cups all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. allspice
pinch of ground cloves
pinch of salt
1 1/4 tsp. baking soda

Preheat oven to 350°F.

Cook raisins and water with the juice of the guava fruit together until tender and most of the liquid has evaporated. Add shortening to the hot raisins. Stir well, then add applesauce, vanilla, sugar and guava fruit. Make sure this is all blended well.

Beat eggs in a small bowl and add to the raisin mixture.

In a mixing bowl, sir together the flour, spices, salt, baking soda and nuts. Add the raisin mixture and put in a 9x13-inch pan sprayed with non-stick cooking spray (Pam).

Bake at 350°F for 40 to 45 minutes.
