CHICKEN MARSALA | |
4 chicken breasts 1/3 c. flour 1 tsp. salt 1/4 tsp. pepper 1/2 c. grated Parmesan 1/2 c. shredded Mozzarella 1/4 c. butter 1 c. sliced mushrooms 1/2 c. chopped green onion 1/2 c. chicken broth 1/2 c. Marsala In shallow pan mix together flour, salt, and pepper. Add chicken (can flatten chicken with mallet), turning to coat. Fry chicken in pan with butter on medium temperature. Cook chicken about 5 minutes, turning. Transfer to baking dish. In same pan add mushrooms and onions to drippings and cook, stirring until slightly tender. Stir in wine and broth. Simmer 10 minutes, stirring occasionally (can thicken sauce a little with flour). Spoon over chicken. Cover and bake at 350 degrees for 15 minutes. Mix cheese and sprinkle over chicken. Increase temperature to 450 degrees. Bake about 10 minutes. |
