FRIED EGG SANDWICH 
1/4 c. chopped onion
1/4 c. chopped green pepper
1/2 c. substitute eggs (recipe found in this section)
1 tbsp. cooking oil or butter
4 slices white or whole wheat bread

Heat oil or butter in small skillet. Cook and stir onions and green pepper until onion is tender. Pour in substitute eggs. As egg mixture begins to set at bottom and sides, gently lift with spatula and turn over. Cook until set. Cut mixture in half and place on bread slices. Mustard or mayonnaise may be spread on the bread.
