AU GRATIN CARROT CASSEROLE 
12-15 carrots
2 c. grated Cheddar or Colby cheese
1/4 c. chopped onions
1/4 c. butter
1/4 c. flour
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard
2 c. milk
1 c. buttered bread crumbs

Slice carrots in 1/4 inch thick rounds. Steam or cook in microwave until almost tender. Drain. Mix carrots and cheese together and turn into a buttered 1 1/2 quart baking dish.

Over medium high heat, saute onion in butter until tender. Stir in flour, salt, pepper and dry mustard. Stir and cook for 1 minute. Remove from heat and gradually add milk, stirring constantly. Bring to a boil, stirring. Pour over cheese and carrots. Top with buttered bread crumbs and bake at 350 degrees for 45 minutes. Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
