ALMOND MACAROONS 
2 c. ground blanched almonds
1 c. granulated sugar
2 egg whites, beaten stiff
1 tsp. almond extract
2 tbsp. confectioners' sugar
Wedges of red candied cherries, for decoration

Gently mix almonds, granulated sugar, egg whites, and almond extract until blended. Shape into 1 inch balls. Place 2 inches apart on well greased and floured cookie sheet. Sprinkle with confectioners' sugar. Bake in 300 degree oven for 15 to 20 minutes until bottoms are golden. Remove, press piece of cherry in each, cool.
