POLISH EASTER ALMOND TORTE | |
6 eggs, separated 1 c. granulated sugar 1 tsp. grated lemon rind 2 tbsp. lemon juice 1 tsp. cinnamon 1 c. ground almonds 3/4 c. bread crumbs 1/4 tsp. salt Separate eggs and save whites. Beat yolks well and gradually add sugar and continue beating until light and fluffy. Then add lemon rind, lemon juice, cinnamon, almonds and bread crumbs, blending well. Whip egg whites and salt until stiff and fold carefully into mixture. Pour into a greased 8 inch tube pan and bake in a preheated 350 degree oven for 1 hour. Remove from oven and let cool in pan. Sprinkle with powdered sugar. Makes 2 servings. |
