ELEANOR'S POTATO SALAD | |
Eleanor was my mother. She had many requests for her recipe, and when she said, "Only use Miracle Whip," many replied that they didn't like it. They were the ones who said, "I made your potato salad, but it didn't come out like yours!" She would ask whether or not they used Miracle Whip, and the answer was always, "No". 4-5 potatoes 8-10 eggs (save two for the top) 1 large onion Miracle Whip Peel, cut in half, and boil the potatoes. Don't let them get too mushy. Hard-boil the eggs. When the potatoes are done, dice them into bite-sized pieces. Peel and dice the eggs when done. Dice the onion. While the potatoes are still warm, mix together with Miracle Whip to taste. If desired, add white pepper to the mixture. Top with two sliced eggs and dust with paprika. Submitted by: Pamela |
