60 Ritz crackers, crushed and rolled fine
1 stick butter, softened
2 sm. instant pudding mix (toasted coconut flavor is superb!!)
1 1/2 c. milk
1 qt. soft vanilla ice cream
Cool Whip, large container

Mix crushed Ritz crackers with butter. Reserve 1/2 cup. Pack rest in 9 x 13 glass dish. Set aside. In large mixing bowl, combine pudding mix with milk. Stir well and add ice cream to pudding mixture. Mix thoroughly and pour over Ritz crust. Top with Cool Whip and sprinkle remaining Ritz as topping and garnish. Refrigerate for several hours before serving. Great dessert to serve on buffet table or to take to someone's home. No leftovers EVER!!
