CHICKEN CORDON BLEU 
Boneless, skinless chicken breasts
Shaved ham
Swiss cheese
Bacon

Use whatever amount you want to make.

SAUCE:

1 c. chicken broth
1/2 c. half and half
2 tbsp. flour
2 tsp. Dijon mustard
2 oz. Swiss cheese, shredded (about 1/2 c.) (do not use pre-shredded cheese)

Inside each chicken breast put some shaved ham and a half slice of Swiss cheese. Roll up and wrap bacon around each chicken breast. Secure with toothpicks. Put in pan and bake 2 hours at 325 degrees or until done. Serve with sauce over the top of each one.

SAUCE: In medium saucepan combine all sauce ingredients except cheese. Using wire whisk, stir mixture until smooth. Stir in cheese. Cook over medium heat until sauce is thickened and begins to bubble, stirring constantly. Spoon some sauce over each chicken breast.
