STUFFED SUMMER SQUASH | |
2 summer squash 2 c. seasoned croutons 1 onion, diced 1/2 green pepper, diced 2 tomatoes, diced 1/4 c. Parmesan cheese, grated Salt and pepper to taste 2 tbsp. butter Cut squash in half, lengthwise, remove seeds. In frying pan, melt butter, add onions, green pepper and tomatoes. Cook until onion is transparent. Add croutons, salt and pepper. Spoon into seed cavity of squash, heaping up. If it doesn't hold together well, add a little water. Sprinkle Parmesan over the top. Place in baking pan with a little water. Bake at 375 degrees F. for about 45 minutes to an hour until squash is tender. |
