MICRO HARVARD BEETS 
1 (16 oz.) can beets, sliced
1 tbsp. cornstarch
1/4 c. vinegar
2 tbsp. sugar
1/4 tsp. salt
2 tbsp. butter

Drain beets, except for 1/3 cup liquid. In glass bowl, combine sugar, cornstarch, and salt. Mix in vinegar, liquid, and butter. Cook 30 seconds in microwave. Stir and cook 2 1/2 minutes or until translucent. Add beets and cook by microwave an additional 30 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
