BIG ROASTER OF VEGETABLE SOUP | |
8 to 9 lbs. of beef 9 qt. water 6 onion 8 c. celery 8 c. carrots 8 c. potatoes 4 (10 oz.) boxes corn 4 (10 oz.) boxes peas 4 quarts whole tomatoes Salt Pepper 14 beef bouillon cubes Combine beef, water, salt and pepper in large electric roaster. Cover and simmer until meat is tender, 2 1/2 to 3 hours. Remove meat from soup and cut from bone in small pieces and return meat to soup. Add remaining ingredients. Simmer until vegetables are tender, about 45 minutes. Makes 18 quarts. |
