SPAGHETTI SQUASH | |
9 inch spaghetti squash 4 tbsp. butter 4 oz. sour cream or plain yogurt Salt and pepper to taste 3 med. tomatoes, peeled and chopped 2 tbsp. fresh parsley Parmesan cheese Cut squash in half; remove seeds with fork. Microwave 6 to 9 minutes or until soft. Let stand until cool enough to handle. Scrape with fork to form spaghetti into a bowl. Mix the next 5 ingredients into spaghetti. Put into casserole and sprinkle with Parmesan cheese. Microwave 4 minutes. |
