PINEAPPLE BANANA SHERBET | |
1/2 c. orange juice 2 tbsp. fresh mint, plus additional for garnish 1 lg. ripe pineapple, peeled, cored, and coarsely chopped 1 tbsp. fresh lime juice 2 tbsp. honey 1 lg. ripe banana Blend orange juice and mint together in a blender until mint is very finely chopped or liquified. Blend in remaining ingredients, except garnish, and puree until smooth. Pour into ice trays or a baking dish and freeze until just beginning to set. Remove from freezer again and repeat once more when just beginning to set. Pack into a container and freeze. If frozen solid; let soften in refrigerator 1 hour before serving. Serve garnished with fresh mint. Serves 4. |
