MANICOTTI 
2 boxes manicotti shells
1 lg. meatless bottle of spaghetti sauce
1 lg. carton Ricotta cheese
1 c. fresh grated Parmesan cheese
1 c. grated Mozzarella cheese
1 c. grated Monterey Jack cheese
1 pkg. frozen chopped spinach
3 eggs
Salt and pepper

Boil Manicotti shells until soft. Drain and cool. Mix in large bowl the rest of ingredients, except spaghetti sauce. Pour 1/4 of spaghetti sauce in the bottom of a 9 x 13 inch glass baking dish. Stuff shells. Pour the rest of sauce on shells and cover with foil. Bake at 300 degrees for 1 hour.
