EGGPLANT CASSEROLE 
2 med. eggplants, skinned & cut longways into 1/2 inch slabs
1 lb. ground beef, seasoned with Mrs. Dash
1/2 lb. mushrooms, sauteed
1/2 lb. Provolone or Mozzarella cheese
1/8 c. Parmesan cheese, grated
15 oz. can sliced, stewed tomatoes

Layer eggplant, tomatoes with juice, beef and mushrooms in a 9 x 12 inch pan (makes 2 layers). Top with cheese.

Place in 350 degree oven for 45 minutes, covered with foil. Bake another 15 minutes uncovered.

Let cool 20 minutes and enjoy.
