SAUSAGE EGG CASSEROLE 
12 eggs
1 lb. grated Mozzarella cheese
1 lb. ricotta
2 tbsp. Parmesan cheese
1 c. flour
1 tsp. baking powder
1 lb. sausage (turkey sausage can be used)

Beat eggs well. Add flour and baking powder to eggs using wire whip. Combine with cheeses. Mix well. Cook sausage; drain. Mix all ingredients. Bake in 9"x13" baking dish, buttered, for 30 minutes at 350 degrees. (This recipe can be cut in half and baked in an 8" square pan.)
