CARROT CAKE WITH CREAM CHEESE
FROSTING
 
3 c. grated carrots
2 c. all purpose flour
2 c. sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
4 eggs, well beaten
1 1/2 c. vegetable oil
1 tsp. vanilla extract

Combine first 7 ingredients: stir in eggs, oil and vanilla mixing well. Spoon batter into 3 greased and floured 9 inch pans. Bake at 350 degrees for 30 minutes or until cake tests done. Spread Cream Cheese Frosting between layers and on top of cake while still warm.

CREAM CHEESE FROSTING:

1 (16 oz.) pkg. powdered sugar
1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 tsp. vanilla extract
1 c. chopped pecans

Cream first 4 ingredients until well blended, stir in pecans. Yield: enough for 3 layer cake.
