POLLO ALLA SBRICIOLATA "CHICKEN
WITH CRUMBS"
 
Pollo alla sbriciolata is a classic Italian dish of chicken baked in a crumbly topping. It is a hearty and flavorful dish that is perfect for a family meal. This is a popular dish in Italy due to its ease of preparation and tasty results.

1 (4-pound) whole chicken
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
pinch red pepper flakes
granulated garlic (for sprinkling)
3 cloves garlic, minced
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon onion powder

Preheat oven to 375°F (190°C). Rinse the chicken inside and out and pat dry. Rub the chicken with olive oil, salt, and pepper. Sprinkle with onion powder and granulated garlic. Use finely granulated garlic to sprinkle on the chicken (not powder) to prevent burning.

In a medium bowl, combine the bread crumbs, Parmesan cheese, basil, oregano, garlic powder, and onion powder. Spread the crumb mixture over the chicken. Place the chicken in a baking dish and bake for 1 hour, or until the skin is golden brown and the meat is cooked through. Let the chicken rest for 10 minutes before carving.

TIPS:

For a crispier skin, preheat a baking sheet in the oven before placing the chicken in it. To make the chicken more flavorful, marinate it in a mixture of olive oil, lemon juice, herbs, and spices for a few hours before cooking.

If you don't have fresh basil, you can substitute 1 teaspoon of dried basil.
