SWEET POTATO CASSEROLE | |
2 1/4 to 2 1/2 lbs. sweet potatoes 1/3 c. butter 2 eggs 1/2 c. milk 1 tsp. vanilla 1/2 c. sugar TOPPING: 1/2 c. chopped nuts 1/2 c. coconut 1/2 c. brown sugar 3 tbsp. melted butter Mix together topping ingredients. Cook, peel and mash sweet potatoes. Melt butter. Beat eggs. Mix together and spread in a 1 1/2 quart casserole. Spread mixed topping on top of potatoes. Bake 1/2 hour at 305 degrees. |
