SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
1/3 stick of butter
2 eggs
1/2 c. milk
1 tsp. vanilla

Mix above ingredients together and set aside. In a separate bowl, mix the following ingredients.

MIXTURE TWO:

1 c. light brown sugar
1/3 c. flour (self-rising)
1 c. coconut
1 c. chopped nuts
1/3 c. butter, softened

Mix 1/2 of mixture one with all of mixture two. Spread over bottom of greased baking dish. Spread remainder of mixture one over top and bake at 350 degrees for 25 to 30 minutes.
