PUMPKIN OR SQUASH MUFFINS | |
3/4 c. packed brown sugar 1/4 c. molasses 1/2 c. butter 1 egg 1/4 c. pecans, chopped 1 c. cooked, mashed or canned pumpkin or squash 1 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1/4 tsp. cloves 1 3/4 c. flour Cream sugar, molasses and butter. Add egg, beaten well. Add pumpkin or squash and blend well. Mix flour, soda, salt and spices. Beat this into pumpkin or squash mixture. Stir in nuts. Fill well greased muffin tins 1/2 full with batter. Bake at 375 degrees for 20 minutes. Makes about 1 1/4 dozen. |
