CHRISTMAS STOLLEN | |
2/3 c. scalded milk 2/3 c. sugar 3/4 tsp. salt 1/2 c. butter 2 tbsp. shortening 2 pkg. dry yeast 1/4 c. warm water 2 eggs, lightly beaten 1/2 tsp. cinnamon 1/4 tsp. mace 1/4 tsp. cardamom 3 1/2 c. unbleached flour, approx. 1 c. candied fruit 1/4 c. raisins 1/2 c. chopped pecans Butter Melt butter and shortening in hot milk. Add sugar and salt. Soften yeast in warm water. When milk is lukewarm, add yeast, eggs, spices and flour to make a soft dough. Knead well on floured surface. Add fruits and nuts, kneading them into dough. Grease bowl, form dough into a ball, put in bowl and let rise, covered with a damp cloth, in bowl for 2 1/2 to 3 hours. Punch down. Form into a 12 x 18 inch oval, then fold in half and place on greased cookie sheet. This makes a HUGE stollen. Dough can be divided into 2 loaves and formed the same way. Let rise, covered with damp cloth, until double - about 1 1/2 to 2 hours. Bake in 400 degree oven for 10 minutes. Reduce heat and cook about 25 minutes more. If 2 loaves are made, time will be a little shorter. While warm, rub crust with butter. Can be iced with confectioners' sugar icing and decorated with fruit. Freezes well. |
