ZUCCHINI BREAD | |
4 c. coarsely shredded zucchini (do not shred in blender) 3 c. all-purpose flour (not self-rising) 2 1/2 c. sugar 1 1/4 c. vegetable oil 4 eggs, beaten 1 tbsp. plus 1 tsp. vanilla 1 tbsp. ground cinnamon 1 1/2 tsp. salt 1 1/2 tsp. baking soda 1/2 tsp. baking powder 1 c. chopped nuts (optional) Heat oven to 350 degrees. Grease generously bottoms only of 2 loaf pans, 9x5x3 inches. Blend all ingredients on low speed 1 minute, scraping bowl constantly. Beat on medium speed 1 minute. Pour into pans. Bake 50 minutes to 1 hour. Cool 10 minutes, remove from pans. Cool completely. Makes 2 loaves. |
