TAMALE PIE 
1 sm. onion, minced
1 tbsp. fat
16 oz. can tomatoes
1 1/2 tsp. salt
1 c. corn meal
2 eggs, beaten
1 c. Cheddar cheese, grated
1 can pitted black ripe olives
1 lb. ground beef
16 oz. whole kernel corn, drained
1 1/2 tsp. chili powder
1/2 c. milk
1 clove garlic, minced

Saute onion and garlic in hot fat until yellow. Add meat and brown. Pour off excess fat. Add vegetables and seasonings. Bring to a boil. Pour mixture into a 9 x 9 inch baking dish. Press olives into mixture.

Combine corn meal, milk and eggs. Spoon over filling. Sprinkle with cheese. Bake at 350 degrees for 1 hour. Makes 4 servings.
