LEMON MERINGUE PIE 
6 1/2 tbsp. corn starch
1 c. sugar
1/4 tsp. salt

Put in saucepan. Boil 2 cups water and stir into pan over low flame until it comes to a boil. Stir all the time. Add 3 egg yolks beaten lightly. Bring to boil again. Add:

2 tbsp. butter
6 tbsp. lemon juice
2 tsp. lemon rind

Set aside to cool.

TOPPING:

3 egg whites
6 tbsp. sugar

Beat egg whites until stiff add sugar one tablespoon at a time, beat until stands in peaks.

Bake crust until light brown. Set aside to cool. Fill pie crust, add egg white spread. Bake at 375 degrees for 15 to 20 minutes to brown meringue.
