BAKED SPINACH 
3 lbs. spinach or 3 boxes frozen chopped spinach
6 slices bacon
1/2 c. chopped onion
1/2 tsp. ground cinnamon
2 tbsp. red wine vinegar
1 tsp. salt
Dash black pepper

Chop spinach or thaw frozen. Cut bacon in 1" pieces, saute with onion. Remove from heat and drain. Add cinnamon, vinegar, salt and pepper. Combine with spinach. Place in greased casserole. Cover. Bake at 350 degrees for 30 minutes.
