ORANGEY BEETS 
2 c. sliced cooked beets
2 tbsp. finely grated orange peel
1/2 tsp. salt
1/2 c. orange juice
1 tsp. vinegar
1 tbsp. cornstarch
1 tbsp. brown sugar
A dash of ground cinnamon
2 tbsp. butter

In saucepan, stir together cornstarch, brown sugar, orange peel, salt and cinnamon. Stir in orange juice and vinegar. Cook stirring constantly until sauce thickens and starts to bubble. Boil and stir 1 minute. Stir in beets and heat through. Serves 4.
