BEEF STROGANOFF 
2 1/2 lbs. lean beef, cut in strips
1/2 c. butter
1 c. chopped onions
2 1/4 c. mushrooms
3/4 c. tomato sauce
1 c. water or stock
2/3 c. sherry
Salt & pepper
Sour cream

Roll beef in flour; saute in butter 5 minutes and place in hot baking dish. Saute onions in same butter until soft, place on before and add mushrooms. Pour seasoning, tomato juice, stock and sherry over meat. Bake in moderate oven, 375 degrees for 30 minutes or until tender. Serve on toast or rice and top with sour cream. Prepare day before, tastier. 4 to 6 servings.
