PASTA AND FAGGIOLI 
2 lb. white Northern beans or white navy beans
1 med. onion
3 cloves garlic
1 1/2 oz. pure olive oil
4 lg. tomatoes, remove skin

Soak beans in water, changing water once or twice overnight. Saute onion and garlic in olive oil. When garlic is soft mash it with fork; add tomatoes and simmer very slowly. Add beans and slow cook 3-5 hours until tender. Take spaghetti cut in small pieces, or small shells or d'talini 1 pound cook and add bens and enjoy. Add locatello romano cheese, salt, pepper (red) to taste.
