POLYNESIAN CAKE 
1 1/4 c. oil
2 c. sugar
3 eggs
2 tsp. vanilla
2 sm. jars strained baby carrots
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
2 oz. coconut
1 c. chopped nuts
1 med. can crushed pineapple, drained

Mix together the oil, sugar, eggs, vanilla, and strained carrots. Mix the flour, cinnamon, baking soda, and salt. Sift into oil mixture. Add coconut, nuts, and pineapple. Pour into 13 x 9 inch greased pan. Bake at 350 degrees for 50 to 60 minutes. Let cool. Frost.

FROSTING:

1 pkg. Dream Whip
1 pkg. instant vanilla pudding
1 1/2 c. milk

Beat ingredients for 2 minutes or until thick. Spread on cake. Sprinkle with added coconut.
