ZUCCHINI & MUSHROOM FRITTATA | |
3 tbsp. olive oil 2 c. thinly sliced zucchini 1 c. sliced fresh mushrooms 2/3 c. minced green onions 1/3 c. minced fresh parsley 2 cloves garlic, mashed 7-8 eggs, beaten 3/4 c. Parmesan cheese 1/2 tsp. basil 1/2 tsp. salt Pepper Heat oil in a large skillet and saute zucchini, mushroom, onions, parsley and garlic in it until well softened. Combine in a bowl with eggs, cheese, basil, salt and a dash of pepper. Pour into a greased 9" square baking pan and bake in a 350 degree oven for 20 to 25 minutes or until set. Serve hot or cold. Serves 4. |
