SCALLOPED POTATOES WITH PORK CHOPS | |
6 pork chops, 1/2 inch thick 2 tbsp. cooking oil Salt Pepper 3 tbsp. butter 3 tbsp. flour 1 1/2 tsp. salt 1/4 tsp. pepper 2 c. chicken broth 6 c. sliced pared potatoes 1 med. onion, sliced and separated into rings Brown pork chops on both sides in hot oil in 12 inch skillet. Sprinkle with salt and pepper to taste. Meanwhile, melt butter in saucepan. Stir in flour, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add chicken broth and cook, stirring constantly until mixture comes to a boil. Place potatoes in bottom of 11 x 7 1 1/12 inch baking dish. Top with onion rings. Pour chicken broth mixture evenly over top. Top with pork chops. Cover with foil. Bake in 350 degree oven for 1 hour. Remove cover and continue baking 30 minutes or until meat is tender. Serves 6. |
