POPPY SEED BLUEBERRY - LEMON BREAD | |
1 pkg. of any blueberry mix with crumb topping 3 tbsp. poppy seeds 1 egg 2 tbsp. lemon peel, grated 3/4 c. water 1 tsp. vanilla TOP: 1/2 c. confectioners' sugar 1 tbsp. lemon juice 1 tbsp. grated lemon peel Top: Combine sugar and lemon juice. Add lemon peel. Preheat oven to 350 degrees. Rinse blueberries and drain. In bowl combine muffin mix and poppy seeds. Mix well (break up lumps). Add egg and water. Stir until well moistened. Add vanilla, blueberries and lemon peel. Pour into greased loaf pan. Add topping (crumb) to batter. Bake at 350 degrees for 55-60 minutes. (Do not over bake.) Pour lemon juice and sugar mixture over warm bread. Let cool and serve. |
