PORK SALAD 
5 c. shredded pork, cooked
1 c. mayonnaise
2 tbsp. olive oil
1 tbsp. wine vinegar
1/2 chopped onion
1/2 chopped bell pepper
1/2 tsp. red pepper or cayenne pepper
1 tsp. salt

Shred left-over pork. Mix mayonnaise, oil, and vinegar. Using a whisk, mix remaining ingredients. Add pork and mix well. Place in refrigerator overnight. Serve on a bed of lettuce.
