ZUCCHINI BREAD | |
1 c. whole wheat flour 1 c. all purpose flour 1 1/2 tsp. baking powder 1 tsp. cinnamon 1/4 tsp. baking soda 2 c. coarsely shredded zucchini 1/4 tsp. salt 3 egg whites 1/2 c. sugar 1/3 c. oil 1 1/2 tsp. vanilla Preheat oven to 350 degrees. Grease 9 x 5 x 3 loaf pan. Mix dry ingredients except sugar. Beat egg whites until frothy. Add sugar, oil, and vanilla. Continue beating for 3 minutes. Stir in zucchini; mix lightly. Add dry ingredients mix until all dry ingredients are moistened. Pour into loaf pan. Bake 40 minutes or until toothpick inserted in center comes out clean. Cook on rack. Remove cake from pan after it has cooled for 10 minutes. To serve cut into 18, 1/2 inch slices. |
