CARIBBEAN CAKE 
1 c. softened butter
1/2 c. Crisco
3 c. sugar
5 eggs
1 tsp. coconut flavoring
1 tsp. rum
3 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1 c. milk

GLAZE:

1 1/2 tbsp. melted butter
1/2 c. powdered sugar
1 tsp. vanilla
1 tbsp. water

Grease and flour a tube pan or 2 bundt pans. In large bowl, cream butter, shortening and sugar. Add eggs, one at a time and then add coconut and rum. In small bowl, sift together flour, salt and baking powder. Add flour mixture and milk slowly in fourths to the large bowl mixing at low speed until all ingredients are wet. Mix at medium speed for 3 minutes. Pour into prepared pans and bake at 350 degrees for 1 hour in a bundt pan or 1 1/2 hours for tube pan. Remove from pan after cooling and drizzle glaze on top.
