ORIENTAL CHICKEN SALAD 
2 tbsp. soy sauce
1 tbsp. water
1 tbsp. peanut butter
1/4 tsp. ground ginger, fresh
1 sm. cloves garlic, minced
1/4 tsp. sesame oil
3/4 tsp. peanut oil
Black pepper, to taste
1 c. vermicelli, cooked
3 oz. cooked and diced chicken
1/2 c. bean sprouts
1/4 c. green onions
1/2 oz. roasted peanuts
1 c. lettuce, shredded

In blender, thoroughly combine soy sauce, water, peanut butter, ginger, garlic, oils, and pepper. Set aside. Combine vermicelli, chicken, sprouts, green onions, and peanuts. Pour soy/oil mixture over chicken/vermicelli mixture; toss to coat all pieces. Place lettuce on serving plates and top with vermicelli/chicken mixture. Serves 2.
